Balancing fresh herbs, meats and select spices, chef Henry Nguyen, one of two founders of Hue Palace, creates Vietnamese dishes. Using ingredients such as ginger, basil, lemon grass, beef and chicken, he cooks a variety of food like egg and spring rolls, bánh mì (Vietnamese sandwich), com chien (fried rice) and Phở (the traditional Vietnamese rice noodle soup).
